Puri unde I puffed rice laddu recipe

Puri unde or puffed rice laddu is the traditional sweet that we usually prepare for traditional family occasions and festivals like Navarathri, Ganesha chathurthi and to distribute to friends and family. I always used to think making these laddu’s is hard, however I found out that this is the easiest, healthiest snack that we can prepare in no time with simple ingredients.
Prepration time – 10 min
Cooking time – 5 to 8 min
Serves – 4
Ingredients –
Puffed rice – 1 1/2 liter
Jaggery – 1 cup grated
Roasted peanuts – 1/2 cup
Roasted gram – 1/2 cup
Dry copra – 4 tbs roughly chopped/grated
Procedure to make or to prepare puri unde/puffed rice laddu –
Heat a heavy bottomed kadai, dry roast puffed rice (warm it up) for 5 min and set aside.
Allow it to cool , Now in a bowl, mix the puri/puffed rice, roasted peanuts, coconut pieces, and hurigadale / roasted gram and keep it aside.
Add 1/4 cup of water to jaggery and keep it on a wok in a medium flame.
Bring it to boil, Let the jaggery melt completely.Strain it
Boil this clean syrup in a kadai on medium low heat and let it boil.
This syrup should reach a thread-like consistency. To test, take some syrup in a spoon, touch it with your index finger, and gently press your finger against your thumb. When you separate your fingers, it should be like a thread. You can also check by adding a drop of syrup into a bowl of water. The syrup should not dissolve.
Once the syrup reaches this consistency, turn off the stove and pour it onto the prepared mix. Mix it with a spoon at first, and once it is warm enough, either make your palm a little wet and make the balls or rub your palms with little rice flour and make the balls.
Fill the mixture in a disposable plastic glass/cup to get a glass shaped laddu’s, Press it by filling the prepared mixture, press tightly with help of a metal/steel cup, allow it to cool for 10 to 15 min, remove it from the mould and set aside.
You have to make laddus/unde when the temperature of the mix is between hot and warm.
Crispy, crunchy Traditional Puri unde/ puffed rice laddu is now ready to eat. Store it in a airtight container and enjoy for 2 to 3 weeks.
