Nutritious brown rice dosa is a healthy and delicious dosa. This recipe was passed on from my granny to my mom from mom to me, which contains healthy ingredients like brown rice, whole chick pea, fennugreek seeds and urad dal. Brown rice is rich in fiber. Chickpeas are a nutrient-dense food, providing rich content  of proteins and iron. Urad dal is very nutritious as it contains protein, potassium, iron and amino acids. Fenugreek seeds are strong aromatic and rich in vitamins. Totally healthy ingredients which makes crisy and yummy dosa, a perfect breakfast for your family.Just try and enjoy.

Soaking time – 4 hrs

Fermentation time – 8 hrs

Cooking time – less than 5 min per dosa

Ingredients to soak –

Brown rice – 3 cup

Whole chick pea – 1 cup

Urad dal – 3/4 cup

Fenugreek – 2 tsp

Poha/thick flattened rice – 1/4 cup

Procedure –

Clean and wash all the ingredients and soak it for 3 to 4 hours,soak all the ingredients separately as shown in the image.

Take a mixer jar add soaked urad dal and poha/thick flattened rice ,run the mixer to make a fine paste by adding water to it.

The batter should be not too thick or too thin prepare the batter as dosa batter consistency.

Make a fine paste and collect the grounded paste in a coatainer.

Add soaked chick pea and fenugreek seeds and make a fine paste.

Collect the  prepared paste in the same container.

Add rice to the mixer jar,and make a fine paste by adding water and collect the batter in the same container.

Mix altogether properly and close the lid of the container,allow the batter for fermentation.

After fermentation ,Add salt to taste and mix properly with a ladle.

Heat a dosa tawa,grease it with oil,

Using a ladle with a rounded bottom, pour some batter into the center of the tawa, in a quick but smooth motion, spread outward in circle.

Pour a few drops of oil/ghee/butter of your choice  around the dosa edges to help it crisp up.when the base turns to golden brown flip to the other side  for a minute and remove .

Continue the same to prepare the next dosa.

Healthy ,nutritious ,crispy and yummy brown rice traditional dosa is ready .Enjoy the dish with any chutney , aloo bhaji /samber ,best when served with sweet coconut milk (kayi halu in Kannada).

Tips – To prepare the Dosa batter you can add all the soaked ingredients together to a wet grinder and make a fine paste by adding sufficient water.
