Vegetable cutlet is a very popular and simple snack item.It is very easy to make and can be had as an appetizer or light afternoon snack or evening snack with tea,It is great for small parties.Vegetable Cutlet is a combination of mashed potato and green vegetables,is a crisp outside and soft inside Indian potato snack. This stomach filling, mild spicy and crispy Indian cutlet tastes irresistibly delicious when served with sweet and sour dips/chutneys like green mint chutney and tamarind chutney.

Preparation time – 15 min

Cooking time – 30 min

Serves – 5

Ingredients –

Potato – 4 medium

French beans – 1 cup finely chopped

Beetroot – 1 cup grated

Green peas – 1 cup

Onion – 1 cup finely chopped

Ginger garlic paste – 1 tsp

Green chilly – 2 no chopped

Garam masala powder –  1 tsp

Turmeric powder – 1/2 tsp

Coriander leaves – 1 cup finely chopped

Coriander powder – 1 tsp

Lemon juice – 1/2 tsp (optional)

Salt to taste

Oil to fry

For coating – 

All purpose flour – 1/2 cupBread crumbs – 1 cup

How to make or prepare vegetable cutlet –

Pressure cook potatoes and set aside.

Heat a kadai by adding oil in it,when it is hot add green chilies stir it,add ginger garlic paste

Fry till the raw smell disappears,add chopped onion

Stir fry ,add vegetables and fry till it turns to golden brown

Cook in a low flame and close the lid of the kadai for 5 min

Add all dry powders and mix properly

add mashed potato and mix properly,add salt to taste.

Turn off the flame and allow the mixture to cool

Mix all purpose flour/maida in a bowl by adding water to a thin batter and keep ready,and bread crumbs in a bowl.

Take a small portion of prepared mixture and make small balls out of it and press gently to a round shape or any desired shape of your choice,dip it in batter and coat with bread crumbs and keep ready.

Heat a flat tawa add 1 tbs of oil around it and shallow fry the prepared cutlet

Cook in a medium flame till it turns to golden brown and crisp.

Enjoy the dish with tomato sauce or green chutney.
