Aloo Palak I Potato spinach curry

Preparation Time : 20 mins Cooking Time : 15 mins Serves : 4

Aloo palak is Indian style Potato and spinach stir fry mildly spiced tasty side dish. This Aloo palak/Potato spinach curry goes well with roti/pulka/pooris.

Ingredients:

Potato – 4 no’s

Spinach – 1 bunch

Cumin – 1 tsp

Onion – 2 or 3 chopped

Ginger garlic paste – 1 tsp

Chilly powder – 1 tsp

Garam masala powder – 1/4 tsp

Coriander powder – 1 tsp

Turmeric – 1/2 tsp

Tomato – 1 or 2 chopped (optional)

Kasuri methi – 1/2 tsp

Salt to taste

Oil to fry

Method:

Clean and rinse spinach, chop it, and keep ready.  Peel potatoes cut it into medium pieces, immerse in water and keep ready.

Keep all the above ingredients handy. Heat a pan with oil in it, when it is hot add cumin, allow it to splutter, then add chopped onion fry until translucent.

add ginger garlic paste, saute until you get a nice aroma, then add chopped tomatoes (optional)

add chilly powder, coriander powder, turmeric, and garam masala powder saute for few secs.

Add chopped potatoes, saute for 1 min

Now add chopped spinach, saute cook covered for few mins, add salt to taste.

Add 1/2 cup of water, cook covered until potatoes and spinach get cooked it takes  5 to 6 mins on medium flame. stir before it is done or pressure cook for 1 whistle.

Ensure the vegetables are cooked, bring the curry to boil until the water gets absorbed fully. Add Kasuri methi, mix it properly, Switch off the flame.

Serve Aloo palak with Chapathi’s or poories.
