Ghee rice I Plain masala rice

Ghee rice is an aromatic and delicious one-pot rice recipe made with ghee and spices. Ghee rice is a south Indian variety of rice that goes very well veg gravies or korma. Ghee rice is a great dish to accompany any type of curry on any occasion, festive or ordinary. Here is the recipe of a quick and easy ghee rice.
Ingredients:
Rice – 2 cups (Sona masuri)
Green peas – 1/2 cup (optional)
Cashew nut – 2 tbs (optional)
Green chilies 3 or 4 no’s
Onion – 2 medium chopped
Coriander – small bunch chopped
Pudina – a small bunch chopped
Ghee + oil for seasoning
Salt to taste
To grind –
Garlic – 10 to 12 cloves
Ginger – 1/4 inch
Clove – 4 or 5 no’s
Cinnamon – 2 small pieces
Cardamom – 1 single

Method:
Rinse rice and soak it for 10 mins, then drain the water in it and keep ready. Boil 4 cups of water to cook 2 cups of rice and keep covered.
Add all the ingredients to grind in a mixer jar, blend it to a coarse paste without adding water.
Heat Ghee +oil in a heavy bottomed pan/pressure cooker, when it is hot add cashew nut (optional) fry until it turns light brown, then slit add green chilies, saute for a while then add onion, chopped pudina, and coriander.
Fry until onion turns translucent, now add blended paste, fry until you get a nice aroma. Then add frozen/fresh green peas (optional) saute well, add hot water, salt to taste. When it begins to boil add rinsed rice, stir and cover the lid of it. Make a low flame for 15 min and turn off the flame.
When the pressure of the cooker settles by its own, open the lid, fluff the rice properly.
Serve hot with Veg or nonveg gravy or Korma and onion tomato raita.
