Raw Mango rice

Raw Mango rice is a very tasty, quick and easy to make recipe and it is a perfect lunch box option, another version of making Mavinakayi chitranna where raw mango, coconut, and chilies are blended and added while seasoning which makes a delicious rice variety.
Ingredients:
To cook –
Rice – 2 cup
To grind –
Raw manga – 1 medium chopped roughly
Dry Chilies – 5 or 6 no’s
Coconut – 1/2 cup
For seasoning –
Mustard – 1/2 Tsp
Cumin – 1/2 tsp
Peanut – 2 or 3 tbs
Chana dal – 1 tsp
Urad dal – 1/2 Tsp
Ginger – 1 tsp grated
Curry leaves – 3 springs
Dry Chilies – 3 or 4 no’s
Asafoetida – 1/4 tsp
Salt to taste
Oil and ghee

Method:
Rinse rice, add 4 cups of water to cook 2 cups of rice. Pressure cook it for 3 whistles.
Rinse raw mango, cut it into small pieces, blend it with grated coconut and dry chilies to a coarse paste(add little water while grinding) and keep ready.
Heat a heavy bottomed pan for seasoning, add oil and ghee in it, when it is hot add mustard allow it to splutter, then add cumin, peanuts fry until it turns to light brown now add channa dal and urad dal
fry until it turns to a golden brown then add dry chilies, grated ginger, curry leaves, fry for few secs,
Now add blended raw mango paste into, saute for few secs, add turmeric and salt to taste. turn off the flame.
Add cooked rice into, toss it well, until the mixture coats the rice evenly.
Add chopped coriander toss it once again.
