Lady’s finger pepper fry recipe

Lady’s finger (Bendekai) / Bendi fry is a simple curry, which goes well with roti’s and as a side dish for rice. This curry is prepared by adding coconut and pepper powder with onion. It is quick and easy to prepare with less ingredients which is rich in taste.

Serves -4
Ingredients:
Lady’s finger – 250 gms
Onion – 2nos (chopped)
Green chillies- 2 (chopped)
Curry leaves – 5 leaves
Coriander leaves for granshiing
Pepper powder – 1 tsp
Grated coconut = 2 tbs
Mustard seeds – 1/4tsp
Salt to taste
Oil to fry
Procedure:
Wipe the Lady’s finger and cut the edges and dice them in to small pieces.
Heat a kadai add lady’s finger stir fry to brown in colour and set aside.
In a the same kadai add 2 tbs of oil when oil becomes hot add mustard seeds when it start to crackle add green chilies and curry leaves fry for 5 sec. Then add chopped onion fry till they become translucent.
Add the fried lady’s finger mic well for while and add salt to taste and little water to cook the lady’s finger. Close the kadai with a lid. Once it is cooked, ie., when water evaporates from the curry add grated coconut and pepper powder and mix altogether and garnish with chopped coriander leaves.
Serve hot with roti or rice.
Note: If required you can also add chopped tomatoes with onion.
